Ingredients:
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- Gel food coloring various colors

- Rainbow sprinkles for decoration
Instructions:
Preheat your oven to 350F 175C and line a cupcake tin with paper liners
In a mixing bowl, whisk together the flour, baking powder, baking soda, and salt
Set aside
In another bowl, cream together the softened butter and granulated sugar until light and fluffy
Beat in the eggs, one at a time, and then stir in the vanilla extract
Add the dry ingredients to the wet ingredients in batches, alternating with the buttermilk
Mix until just combined
Divide the cupcake batter evenly into separate bowls, one for each color you want to use
Add gel food coloring to each bowl, creating a rainbow of colors
Spoon a small amount of each colored batter into each cupcake liner, layering the colors for a rainbow effect
Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean
Allow the cupcakes to cool completely on a wire rack
Prepare Electric Rainbow Buttercream Frosting using the separate recipe
Once the cupcakes are cooled, pipe the Electric Rainbow Buttercream on top using a decorating bag and tip, creating ruffled swirls of different colors
Decorate with rainbow sprinkles for an extra burst of color and fun
