These mini vanilla cupcakes are light, fluffy, and perfectly sweet. They're great for parties or just a sweet treat!
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup almond milk
- 1/4 cup coconut oil, melted
- 1 tbsp apple cider vinegar
- 1 tsp vanilla extract
Instructions:
Put the oven on 350F 175C and line a mini cupcake tin with paper liners
Mix the flour, sugar, baking powder, baking soda, and salt in a large bowl with a whisk
The almond milk, coconut oil, apple cider vinegar, and vanilla extract should all be mixed together in a different bowl
Add the wet ingredients to the dry ones and mix them together just until they are mixed
Fill up each cupcake liner about three quarters of the way to the top with batter
Put it in the oven and bake for 10 to 12 minutes, or until a toothpick stuck in the middle comes out clean
Cool the cupcakes for a few minutes in the pan, then move them to a wire rack to cool all the way down
