Buttery Keto Vanilla Shortbread Cookies

Ingredients:

  • 1 1/2 cups almond flour
  • 1/3 cup powdered erythritol or monk fruit sweetener
  • 1/4 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

Preheat your oven to 325F 165C and line a baking sheet with parchment paper

In a mixing bowl, combine almond flour, powdered sweetener, softened butter, vanilla extract, and a pinch of salt

Mix until a dough forms

Form the dough into small balls, then flatten them into a round shape using your hands or a fork, to create the classic shortbread cookie appearance

Place the cookies onto the prepared baking sheet, leaving some space between each cookie

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden

Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
