Asian Kale Salad with Ginger Peanut Dressing



This Asian Kale Salad with Ginger Peanut Dressing is a healthy and tasty dish that you can eat for lunch or as a side. Every bite is a blast of flavor thanks to the fresh vegetables, crunchy peanuts, and tangy ginger peanut dressing.

Ingredients:

  • 4 cups chopped kale leaves
  • 1 cup shredded carrots
  • 1/2 cup red bell pepper, thinly sliced
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped scallions
  • 1/4 cup roasted peanuts
  • 1/4 cup sesame seeds
  • 1/4 cup edamame optional
  • 1/4 cup mandarin orange segments optional

Instructions:

Chop the kale leaves and shred the carrots

Add the red bell pepper, cucumber, cilantro, scallions, and edamame if using to a large bowl

Mix the Ginger Peanut Dressing ingredients see below in a separate small bowl using a whisk

Pour the dressing over the salad and toss it around to make sure everything is covered

Toast some peanuts and sesame seeds and then sprinkle them on top of the salad

If you want, you can decorate with segments of mandarin orange

You can eat it right away or put it in the fridge until you're ready
